Spaghetti Squash Faux-sta

Savory Eats

I am a healthy eater, most of the time. Food "substitutes," like spaghetti squash in place of pasta and carrot fries in place of potato fries, make me foodgasm. Last night I made fauxsta (faux-pasta).
Ingredients:
  • One spaghetti squash
  • One can of tomato sauce (any kind)
  • Two garlic cloves
  • Broccoli, mushrooms, onions (as much as you like)
  • Parmesan cheese (as much as you like)
  • Olive oil
  • Salt, lemon pepper, basil
Recipe:
-Cut the spaghetti squash into quarters (difficult, so put your back into it). Place in pot of boiling water (about 2 inches of water). Boil squash for about 10 minutes and set aside to cool.
-Chop veggies and steam to your liking.
-Chop garlic and saute in light olive oil. Add steamed veggies and mix.
-Heat tomato sauce in pot. Add "garliced" veggies.
-Now, back to the spaghetti squash. Remove seeds with a spoon. Take a fork and scrape the squash out into a bowl. It will look just like spaghetti!
-Spice up your squash with some S&P.
-Pour sauce/veggies ontop of squash.
-Sprinkle a generous amount of parmesan cheese. Enjoy!

Tips:
There are ways to jazz up this recipe...
  • Add some real spaghetti
  • Add some turkey meatballs!
  • Top spaghetti squash with garlic butter
  • Cover the dish with parmesan cheese and bake in the oven at 350 for 20 minutes (see picture below)
